Yogi Tea, also known as "Masala Chai" or "Masala Tea", is a traditional Indian tea flavored with spices. It is usually prepared with milk and sugar, but there are many variations of this recipe. Here is a version of Yogi Tea according to Yogi Bhajan, an Indian spiritual master known for popularizing Kundalini Yoga in the West:
Ingredients to prepare yogi tea:
- 2 cups of water
- 2 cups of milk (or vegetable milk)
- 1 teaspoon cardamom seeds
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon black peppercorns
- 1 teaspoon black tea leaves
- 1 cinnamon stick
- 5 clove seeds
- 2 bay leaves
- 1 tablespoon of sugar (optional)
Preparation of yogic tea:
- In a saucepan, boil the water with all the spices (except tea and sugar). Let simmer for 10 minutes over low heat.
- Add tea and sugar (if desired) and steep for another 5 minutes.
- Add the milk and bring to a boil.
- Simmer for another 5 minutes, then remove from the heat.
- Strain the tea to remove the spices and pour into mugs.
Yogi Tea is usually served hot, but you can also let it cool and serve it cold in the summer. You can add a little honey or cane sugar if you wish.
